Spicy Shrimp Spaghetti
I have had a craving for pasta lately maybe something about the weather changing. Anyhow I decided to try to come up with a new pasta, we had spaghetti and shrimp. So I decided a spicy shrimp pasta sounded good… and it was.
Here is the recipe:
12 oz of spaghetti
1 zucchini 2 chili peppers20 oz shrimp 4 TBSP butter (room temperature/softened)2 oz minced garlic 6 TBSP shredded Parmesan cheese
1. Boil water with salt and cook spaghetti 2. While waiting for water to boil cut zucchini in half and then cut 1/4 inch little moons, then thinly slice chilies.3. Mix softened butter and minced garlic together.4. Cook zucchini with a drizzle of olive oil and salt & pepper.5. Then cook shrimp and add a little more olive oil if needed. 6. Reserve 1/4 cup of spaghetti cooking water and drain pasta.7. Add spaghetti, garlic butter, 1/2 of shredded Parmesan, and pasta water to shrimp and zucchini.8. Season with salt and pepper 9. Bowl up pasta and top with rest of Parmesan and a pinch of Trader Joe’s Italian Style Soffritto Seasoning Blend.
